This recipe is a perfect blend of crispy oyster mushrooms, sautéed peppers, and fresh greens, all nestled in a sandwich that’s both hearty and delicious.
Ingredients:
For the Mushrooms:
- 8 oz oyster mushrooms
- 1 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3/4 cup plant-based milk (or regular milk)
- 1 tsp apple cider vinegar
- 1 cup panko breadcrumbs
- Cooking spray
For the Sandwich:
- 4 sandwich buns or ciabatta rolls
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 tbsp olive oil
- 1 cup fresh greens (e.g., arugula, spinach, or mixed greens)
- Vegan mayo, regular mayo, or aioli
- Pickles (optional)
Instructions:
Step 1: Prepare the Mushrooms
- Preheat your air fryer to 375°F (190°C).
- Gently clean the oyster mushrooms with a damp paper towel and tear them into sandwich-sized pieces.
Step 2: Create the Breading Station
- In a shallow bowl, mix the flour, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper.
- In a second bowl, whisk together the milk and apple cider vinegar to create a buttermilk substitute.
- In a third bowl, place the panko breadcrumbs.
Step 3: Bread the Mushrooms
- Dip each mushroom piece into the flour mixture, ensuring it’s fully coated.
- Next, dip it into the buttermilk mixture, letting any excess drip off.
- Finally, coat it in the panko breadcrumbs, pressing gently to adhere.
Step 4: Air-Fry the Mushrooms
- Place the breaded mushrooms in a single layer in the air fryer basket.
- Lightly spray with cooking spray for extra crispiness.
- Air fry for 10-12 minutes, flipping halfway through, until golden and crispy.
Step 5: Sauté the Peppers
- Heat olive oil in a skillet over medium heat.
- Add the sliced red and yellow bell peppers and cook for 5-7 minutes until softened and slightly charred.
- Season with a pinch of salt and pepper.
Step 6: Assemble the Sandwich
- Toast the buns lightly if desired.
- Spread a generous layer of mayo or aioli on the bottom half of each bun.
- Add a handful of fresh greens, followed by the sautéed peppers.
- Top with crispy air-fried oyster mushrooms.
- Add pickles if desired, then close the sandwich with the top bun.
