Shroom Traders Crispy Air-Fried Oyster Mushroom Sandwich with Peppers and Green

This recipe is a perfect blend of crispy oyster mushrooms, sautéed peppers, and fresh greens, all nestled in a sandwich that’s both hearty and delicious.


Ingredients:

For the Mushrooms:

  • 8 oz oyster mushrooms
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 cup plant-based milk (or regular milk)
  • 1 tsp apple cider vinegar
  • 1 cup panko breadcrumbs
  • Cooking spray

For the Sandwich:

  • 4 sandwich buns or ciabatta rolls
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 tbsp olive oil
  • 1 cup fresh greens (e.g., arugula, spinach, or mixed greens)
  • Vegan mayo, regular mayo, or aioli
  • Pickles (optional)

Instructions:

Step 1: Prepare the Mushrooms

  1. Preheat your air fryer to 375°F (190°C).
  2. Gently clean the oyster mushrooms with a damp paper towel and tear them into sandwich-sized pieces.

Step 2: Create the Breading Station

  1. In a shallow bowl, mix the flour, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper.
  2. In a second bowl, whisk together the milk and apple cider vinegar to create a buttermilk substitute.
  3. In a third bowl, place the panko breadcrumbs.

Step 3: Bread the Mushrooms

  1. Dip each mushroom piece into the flour mixture, ensuring it’s fully coated.
  2. Next, dip it into the buttermilk mixture, letting any excess drip off.
  3. Finally, coat it in the panko breadcrumbs, pressing gently to adhere.

Step 4: Air-Fry the Mushrooms

  1. Place the breaded mushrooms in a single layer in the air fryer basket.
  2. Lightly spray with cooking spray for extra crispiness.
  3. Air fry for 10-12 minutes, flipping halfway through, until golden and crispy.

Step 5: Sauté the Peppers

  1. Heat olive oil in a skillet over medium heat.
  2. Add the sliced red and yellow bell peppers and cook for 5-7 minutes until softened and slightly charred.
  3. Season with a pinch of salt and pepper.

Step 6: Assemble the Sandwich

  1. Toast the buns lightly if desired.
  2. Spread a generous layer of mayo or aioli on the bottom half of each bun.
  3. Add a handful of fresh greens, followed by the sautéed peppers.
  4. Top with crispy air-fried oyster mushrooms.
  5. Add pickles if desired, then close the sandwich with the top bun.

Serving Suggestions:

Serve warm with a side of sweet potato fries, a simple salad, or your favorite chips for a complete meal.
