Crispy Fried King Blue Oyster Mushrooms

Ingredients:
- 1 pound King Blue oyster mushrooms
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1 large egg, beaten
- 1/2 cup water
- Vegetable oil for frying
Instructions:
- Prepare mushrooms: Clean the mushrooms by wiping them with a damp cloth. Cut them into bite-sized pieces.
- Make batter: In a shallow bowl, combine the flour, cornstarch, garlic powder, onion powder, paprika, black pepper, and salt. In a separate bowl, whisk together the egg and water.
- Coat mushrooms: Dip each mushroom piece into the egg mixture, then coat in the flour mixture. Shake off any excess.
- Fry: Heat vegetable oil in a deep skillet or pot to 350°F (175°C). Carefully add the coated mushrooms to the hot oil, working in batches to avoid overcrowding. Fry until golden brown and crispy, about 2-3 minutes per batch.
- Drain and serve: Remove the fried mushrooms from the oil and drain on paper towels. Serve immediately with your favorite dipping sauce, such as a lemon-dill aioli or a spicy sriracha mayo.
