Crispy Fried Pink Oyster Mushrooms AKA “Vegan Fried Chicken”

Ingredients:

  • 1 pound fresh pink oyster mushrooms
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • Vegetable oil, for frying

Instructions:

  1. Prepare the Mushrooms:
    • Clean the mushrooms gently with a damp paper towel to remove any dirt or debris.
    • Cut the mushrooms into bite-sized pieces.
  2. Create the Batter:
    • In a shallow dish, combine the flour, paprika, garlic powder, onion powder, black pepper, and salt.
    • In another shallow dish, beat the egg.
    • In a third shallow dish, place the breadcrumbs.
  3. Coat the Mushrooms:
    • Dredge the mushroom pieces in the flour mixture, shaking off excess.
    • Dip the floured mushrooms into the beaten egg.
    • Roll the egg-coated mushrooms in the breadcrumbs, ensuring they are fully coated.
  4. Fry the Mushrooms:
    • Heat the vegetable oil in a deep fryer or large pot to 375°F (190°C).
    • Carefully add a few mushrooms to the hot oil, being cautious of oil splatters.
    • Fry the mushrooms for 2-3 minutes per side, or until golden brown and crispy.
    • Remove the fried mushrooms from the oil and drain on paper towels.
  5. Serve:
    • Serve the hot, crispy mushrooms immediately with your favorite dipping sauce, such as marinara sauce, ranch dressing, or a spicy aioli.
