Gourmet Blue Oyster Mushroom Pizza

Ingredients:

  • 1 pizza dough (store-bought or homemade)
  • 1 cup blue oyster mushrooms, cleaned and sliced
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme leaves (or ½ tsp dried thyme)
  • 1 clove garlic, minced
  • 1 tablespoon butter
  • 1/2 cup crème fraîche or ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh arugula (optional, for topping)
  • Truffle oil (optional, for drizzling)

Instructions:

  1. Preheat Oven: Preheat your oven to 475°F (245°C) with a pizza stone or baking sheet inside to heat up.
  2. Prepare Mushrooms: In a large skillet, heat olive oil over medium heat. Add the sliced blue oyster mushrooms and sauté until they begin to soften and release their moisture (about 3-4 minutes). Add the minced garlic and thyme, cook for an additional 2 minutes, then season with salt and pepper. Remove from heat and set aside.
  3. Assemble the Pizza:
    • Roll out the pizza dough onto a parchment paper or a floured surface.
    • Spread a thin layer of crème fraîche or ricotta on the dough, leaving a small border around the edges.
    • Sprinkle a generous amount of shredded mozzarella over the base, then evenly distribute the sautéed mushrooms on top.
    • Sprinkle with Parmesan cheese for an added savory kick.
  4. Bake the Pizza: Transfer the pizza (with parchment paper if using) to the preheated pizza stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
  5. Finish and Serve: Once out of the oven, drizzle with a touch of truffle oil for an elegant finish, and top with fresh arugula if desired. Slice and enjoy!
