Lions Mane Crab Cakes
Yields: 4 servings Prep time: 20 minutes Cook time: 15-20 minutes
Ingredients:
- 1 pound fresh lions mane mushroom, picked and shredded
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped celery
- 2 cloves garlic, minced
- 1 large egg, beaten
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup vegetable oil
- 1/2 cup breadcrumbs for coating
Instructions:
- Prepare the mushrooms: In a large bowl, gently squeeze the shredded lions mane mushrooms to remove excess moisture.
- Combine ingredients: Add the breadcrumbs, onion, celery, garlic, egg, Dijon mustard, lemon juice, paprika, salt,and pepper to the bowl with the mushrooms. Mix until well combined.
- Form cakes: Shape the mixture into 8 small patties, about 2 inches in diameter and 1 inch thick.
- Coat: Coat the patties in the remaining breadcrumbs.
- Cook: Heat the vegetable oil in a large skillet over medium heat. Cook the patties for 5-7 minutes per side, or until golden brown and cooked through.
- Serve: Serve immediately with your favorite dipping sauce, such as tartar sauce or aioli.
