Shroom Traders Oyster Mushroom Stew 

Ingredients:

  • 1 pound oyster mushrooms, cleaned and trimmed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 (28-ounce) can crushed tomatoes, undrained
  • 1 quart vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup fresh basil, chopped
  • Crusty bread, for serving

Instructions:

  1. Sauté the Mushrooms: Heat olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the 1 oyster mushrooms and cook until they release their liquid and begin to brown. 

  2. Deglaze and Add Liquid: Pour the white wine into the pot and scrape up any browned bits from the bottom. Add the crushed tomatoes, vegetable broth, bay leaf, thyme, and oregano. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the mushrooms are tender.
  3. Season and Serve: Season the stew with salt and pepper to taste. Stir in the fresh basil. Serve hot with crusty bread.

Tips:

  • For a richer flavor, consider adding a splash of cream or a dollop of crème fraîche.
  • You can also add other vegetables to the stew, such as carrots, celery, or zucchini.
  • Serve with pasta, rice, or polenta for a hearty meal.
