Shroom Traders Oyster Mushroom Stew
Ingredients:
- 1 pound oyster mushrooms, cleaned and trimmed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1 (28-ounce) can crushed tomatoes, undrained
- 1 quart vegetable broth
- 1 bay leaf
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup fresh basil, chopped
- Crusty bread, for serving
Instructions:

Sauté the Mushrooms: Heat olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the 1 oyster mushrooms and cook until they release their liquid and begin to brown.
- Deglaze and Add Liquid: Pour the white wine into the pot and scrape up any browned bits from the bottom. Add the crushed tomatoes, vegetable broth, bay leaf, thyme, and oregano. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the mushrooms are tender.
- Season and Serve: Season the stew with salt and pepper to taste. Stir in the fresh basil. Serve hot with crusty bread.

- For a richer flavor, consider adding a splash of cream or a dollop of crème fraîche.
- You can also add other vegetables to the stew, such as carrots, celery, or zucchini.
